Food Allergy: The Next Health Epidemic?

Food allergies in children are more common than ever - and parents are having to fight with schools and daycare centers to ensure that their children are not being exposed to the foods to which they are allergic. This may be much more difficult than it seems. With children bringing lunches and snacks to school, and cafeterias trying to prepare a wide variety of foods, it can be nearly impossible to avoid certain foods. Common allergenic foods, such as milk, eggs, peanuts, wheat and soy are found in so many foods, that accidental exposure is very common.
